She states the obvious because she relies too much on her ability to read minds. She ironically, doesnt know what it is like not to be able to do that. So she doesn’t know what is and is not obvious to others. Although you would think that by now she would have picked up on the interal eye rolling going on when she states the obvious AGAIN.
The stories which her empathy abilities are more useful don’t make it to the show unfortunately, they’re over too quickly. That’s my theory.
